This unique lot was crafted by their partner and colleague, who returned to Ethiopia for a third year to experiment with yeast and fermentation. The result is even cleaner and more refined than last year, showcasing a fruity profile with a silky body. This yeast-assisted, semi-anaerobic natural process highlights tasting notes of jammy fruits, apricot, and brown sugar.
