The exceptional altitude leads to a slow maturation of the cherries, concentrating their sugars and flavors. This results in a structured cup with a "crunchy" apricot sweetness, bright lemon-zest acidity, and a clean, tea-like finish reminiscent of juicy Rainier cherries.
