
PERC - El Guayacan
Tasting Notes: Biscoff, Mandarin.
El Guayacán is grown in the San Ignacio province of Cajamarca, near the Ecuadorian border in the northern Peruvian Andes. This coffee is named after the bright yellow guayacán trees that characterize the landscape and provide essential shade for the coffee plants. The lot is produced by dedicated smallholders who emphasize quality through precise post-harvest management. Fully ripe cherries are floated to ensure density before being pulped and fermented in open-air tanks for up to 50 hours. The coffee is then washed multiple times and dried in solar dryers for approximately 15 to 20 days. This traditional process yields a highly balanced and sweet cup, featuring warming notes of Biscoff cookie and panela sugar complemented by a bright mandarin acidity.
