Tasting Notes: White Wine, Orange, Honey. Produced by Maria Fernanda Tapia and Carlos Iñiguez in Loja, Ecuador, this Sidra lot is "cultured washed." Using a microbial "must" starter from natural fermentations, the coffee undergoes 24 hours of anaerobic fermentation before a cold-water thermal shock.
