Produced by Ricardo Zelaya, a fourth-generation farmer, this lot consists of Caturra and Bourbon varieties grown on the volcanic slopes of VolcƔn de Agua. The traditional washed process, followed by a slow 21-day drying period on raised beds in a solar dryer, results in a smooth, syrupy texture. The cup is defined by a comforting malt sweetness and notes of maple syrup, balanced by a gentle yellow plum acidity, making it ideal for both espresso and filter brewing.
